I know you don’t believe me, but it is. It might even be considered a super food because the main ingredient is avocado. Yes, you read that right..avocado! This recipe is from Jennifer Cornbleet’s Raw Food Made Easy (http://www.learnrawfood.com/). It is all raw and really, really good.
1/4 c pitted medjool dates, soaked for 20 minutes.
1/4 c pure maple syrup (not aunt Jemima’s, people)
1/2 tsp vanilla (optional)
3/4 c mashed avocado (1 1/2 avocados)
1/4 c + 2 tbsp unsweetened cocoa
1/4 c water
Process in food processor with S blade until smooth.
Vanilla Creme Sauce
1 c raw cashews (soaked for 2 hours)
1/4 c + 2 tbsp water
2 tbsp pure maple syrup
1 tsp vanilla extract
Place all ingredients in a food processor with S blade or blender. Blend on high until smooth.
Layer the mousse and the creme in sundae glasses or champaign glasses. Chill.
If refrigerated, serve the same day. Otherwise freeze until ready to serve (2 weeks max).
This is really tasty. If you have allergies like me, this can give you you chocolate or even ice cream fix (if you eat it frozen) without the dairy. No gluten, no eggs. Wonderful!
