Okay, okay, so it has an irregular shape, but hey it’s homemade, Yumm. This no whimpy pizza. This is thai chicken pizza. I was inspired by a pizza I used to get back before I knew I could not eat gluten (how sad for me,right, I didn’t know until I was 35 years old). Anyhoo, I used to get this pizza at a little place called The Wildhorse Saloon in Gardnerville, NV. So I had to make up the sauce and am still working on it. I thought my sauce was too sweet and too salty (how can that be?…. it’s true though, it was). So, here is my rendition (modified by my experience to reduce the saltiness and sweetness) of Thai Chicken Pizza.
Thai Sauce (improvise here… it’s ok, trust yourself!)
Garlic, lots of garlic ( I used 5 cloves)
1 tbsp Olive Oil
1/4 cup Reduced Sodium Tamari, (Gluten Free) sauce (I like San-J)
1/2 cup of water
1-2 tbsp of Sriracha Hot Chili Sauce (See Huy Fong Sriracha)
1 tsp Dynasty Chinese Spices
1/2 bag Pizza Cheese Mix
1-2 tbsp corn starch
1/4 cup water
1/2 cup green onions choppped

I used Bob’s Red Mill GF Pizza Crust however….I do not use the yeast. I don’t like yeast, I don’t do well on yeast, so I use 1 TBSP of baking powder and 1 tsp baking soda instead. It works just fine and I don’t have to deal wtih the gas and digestive problems of yeast…. I’m just sayin….
Anyway, cook to the instructions. I make two pizzas with one crust, I make it as thin as possible and cook it a little longer. Those of you who are familiar with GF breads, they don’t crisp up well, so any help you can give it, helps… really.
In small sauce pan, saute garlic in oil until brown. Add tamari, water, chili sauce and chinese spices. Bring to a boil. In a measuring cup, add cornstarch and water, stir until smooth. Add to boiling sauce, simmer until thickened.
Chicken and Cashews
2 Organic Chicken breasts
1/2 cup of raw cashew pieces
Saute chicken breasts in oils in a wok, until outside is white. Remove from heat and cut into small pieces. Return to wok, add cashews (raw) and saute until chicken is done. Add about 1/3 of the sauce and stir until blended. Remove from heat.
Assemble the Pizza
On prepared/cooked crust add sauce and spread onto crust. Add cheese, top with chicken, cashew mixture and green onions. Cook on 425 degrees for 15 to 20 minutes or until cheese is bubbly.
Ok, so it’s not an exact recipe, but that just give you more room to be creative. Is there a favorite restaurant with sauce that would work on this pizza? Eyeball that sauce… take the chance, the worst thing that can happen… you throw it out and eat out or eat cereal for dinner. So what, you learned and next timeyou will be better.
