Inspired by a recipe from my Indian friend. She has shared several recipes but I really like this one. It is vegan, vegetarian, gluten free, dairy free, egg free, nut free. Delicious!!
1-2 tbsp olive oil
3-4 cloves garlic chopped
1 med Yukon gold potato peeled and chopped into small cubes.
1-2 carrots cubed
1/2 cup frozen peas
1/2 cup sun dried tomatoes packed in olive oil
2-3 cups cooked brown basmati rice
2-3 tsp onion powder
1-2 tbsp cumin
2 tsp turmeric
1 tsp dried basil
Salt and pepper to taste
Saute in wok, first 7 ingredients until desired doneness. Add cooked rice. Add spices and saute a few minutes to blend.
